WATERMELON CARPACCIO: THE REFRESHING SUMMER STARTER

Today we present a delicious, refreshing and sophisticated recipe, ideal to impress your guests. This is a juicy and flavorful vegetarian carpaccio that fuses the sweetness of watermelon with the creaminess and salty touch of feta cheese. To elevate this dish to another level, we have marinated it with a vinaigrette of olive oil, honey and lime, and added pieces of cashew for a crunchy touch and mint leaves for aroma and freshness. Ingredients

For the carpaccio:

  • 1/2 small watermelon (baby watermelon)
  • 3.5 oz feta cheese
  • Fresh mint leaves
  • A handful of cashew
  • parmesan cheese

For the vinaigrette:

Materials

  • Mandolin or sharp knife

Preparation

  • Step 1:

    Cut the watermelon into very thin strips. You can use a sharp knife or a mandolin to obtain uniform cuts. Place them on a platter or tray.

  • Step 2:

    Prepare the vinaigrette: In a bowl mix olive oil, lime juice, honey, salt, pepper.

  • Step 3:

    Crumble the feta cheese with your hands or with a fork and spread it on top of the watermelon, then add a few very fine pieces of parmesan.

  • Step 4:

    Now, drizzle the vinaigrette evenly over the carpaccio and then add a few fresh mint leaves.

  • Step 5:

    To finish, sprinkle the crushed cashew on top of the watermelon carpaccio to give it a crunchy touch and that's it, enjoy!
