HAM, OLIVE AND SUN-DRIED TOMATO CAKE WITH SKYR

Ingredients

  • 3.5 oz flour
  • 2 tsp baking powder
  • salt
  • pepper
  • rosemary
  • 3 eggs
  • 1/2 cup olive oil
  • 1/2 cup skyr
  • 5 oz diced ham (or chopped ham)
  • 2 oz green olives
  • 2 oz sun-dried tomatoes
  • 1/2 cup grated cheese

Materials

  • Cake mould 9.5x4.5 inches/24x11 cm

Preparation

  • Step 1:

    Mix flour, baking powder, salt, pepper and rosemary.

  • Step 2:

    Add the eggs, olive oil and skyr and mix well until smooth.

  • Step 3:

    Then add the diced ham, sun-dried tomatoes and chopped olives, blending well with a pastry blender.

  • Step 4:

    Pour into a greased cake tin.

  • Step 5:

    Bake in a preheated oven at 350°F/180°C for 30 to 40 minutes. Check with a wooden pick: if it comes out clean, it's ready; if not, cook longer.

  • Step 6:

    All set!
