To refresh yourself at the start of the meal, nothing beats a good cold soup! Today, cucumber takes center stage, paired with mint and yogurt for an extra fresh and flavorful result. As for difficulty, it couldn't be simpler. Just put all your ingredients in a blender, blend it all together, and... that's it! Serve it in small glasses for an appetizer ;-)
Peel the cucumber and cut it into quarters. Put the pieces in the blender.
Add the yogurt, fresh mint leaves, garlic clove, lemon juice, salt, and pepper. Blend until smooth.
Pour the soup into a bowl and decorate with fresh mint leaves. Enjoy it well chilled!
