Preheat the oven to 350°F/180°C. In a bowl, combine olive oil with finely chopped parsley, chopped chives, crushed garlic clove, grated lemon zest, and salt. Mix well to blend all the ingredients. Then keep aside.
Lay the lobster on a cutting board with the back side up and, using a sharp knife, split it in half lengthwise.
Clean the lobster by using a teaspoon to gently remove the digestive organ (the green part, also called the coral or tomalley), being careful not to damage the flesh.
Quickly rinse the lobster under cold water to remove any residue. Blot the meat with paper towels arrange the lobster in a baking dish.
