Cut the apricots in 2 then 3.
Cut circles in the puff pastry. *You can opt for rectangular puff pastry and cut 6 rectangles from the dough.
Place some sugar on a silicone mat or a baking tray covered with parchment paper. Add a pinch of rosemary on top.
Add 3 apricot slices on top.
Then add a circle of dough and prick the top with a fork to prevent the dough from swelling when cooking.
Bake in an oven preheated to 350°F (180°C) for 20 minutes.
Wait about 3 minutes before fliping them. And there you are, your apricot tatin tartlets are ready!
