FROZEN MINI JELLY CHEESECAKES: FUN PARTY TIME DESSERTS

When you’ve got parties and themed events planned, desserts are a great way to cap-off the evening. If it’s a special occasion, getting a bit creative is always welcome. These frozen mini jelly cheesecakes provide you with that chance to make something that’s as tasty as it is beautiful. The no=bake cheesecake recipe is as easy to put together as the jelly and preparation barely takes any time. The longest part is waiting for them to set in the freezer.

Frozen mini jelly cheesecakes tips

Preparing these frozen mini jelly cheesecakes seems more complicated than what it really is. First, you prepare the cheesecake mixture in the ring form moulds. Then, pop it into the freezer overnight to freeze. The next day, prepare the jelly and put the frozen cheesecake rings in the liquid jelly. Place the cheesecake and jelly mixture back in the freezer. And after two hours, enjoy these delicious icy cold bites. They look great on a dessert table but are best enjoyed while still chilled.

Frozen mini jelly cheesecakes recipe

Ingredients

  • 1 packet jelly

  • 225 ml hot water

  • 3 sleeves gelatine

  • 1 tin unsweetened ideal milk (chilled)

  • 1 packet Philadelphia cheese

  • 6 large strawberries, chopped

  • 125 ml icing sugar

Method

  • For the cheesecake
  • Puree the strawberries with a blender.
  • Place 2 gelatine sheets in a cup and fill half with water. place in the microwave for 1 minute. If it needs more melting, add another sheet and microwave for another 30 seconds. Set aside.
  • Combine the strawberries, chilled ideal milk and the Philadelphia cheese with the icing sugar in a mixing bowl and mix well with an electric mixer until smooth and fluffy. 
  • Add the gelatine and mix well.
  • Take a silicone mini ring mould (with 6 moulds) and spray with cooking spray. 
  • Spoon carefully the mix into the moulds and place in the freezer overnight. 
  • For the jelly
  • Add a packet of strawberry jelly in 225ml boiling water together with 1 sleeve gelatine and heat in the microwave until dissolved. 
  • Let it cool down. 
  • Remove the frozen cheesecakes from freezer, place them on a plate and set aside. 
  • Pour the jelly ⅓ into each mould.
  • Return the frozen cheesecakes into the moulds in the jelly so that they float. 
  • Place back into the freezer for at least 2 hours.
  • Remove just before serving.
